Well, I own one of these cool fish as well. As you may or may not know, these guys are touchy and can move like nobody's business. What I do is slowly prod around the tank with a dlunt object, like the back end of a net or spongestick, until I scare him up. He'll usually stay up on top for awhile ...

Ah, man.
When you're out of town, either give the person watching over your tank a bag with set amount of food, or just don't feed them anything, if you aren't gone long. The fish are better-off going a bit hungry than being overfed. Naturally, most fish can do fine without food for nearly a week ...
