I think beginners believe they should start with a small tank where as in fact it would be much better for beginners to get a big tank as they are much more stable and if you miss a couple of water changes before a routine is in place it won't matter. I agree, undergravel filters are (or in my case were so much better). They are so much easier to maintain and clean but we do get laughed out of the fish shop when we complain about our canister filter and wish tanks still came with undergravel filters.

Maybe it is a good idea to grow the plants to a good size before introducing them to the tank. My java fern was full grown before I got the sharks and they haven't touch them so maybe they're not as appetising as young plants. Though it might be that your sharks will always love the continuous snack...

I have silver dollars and silver (bala) sharks and the only plant I've found that they don't eat is Java fern. Its not the nicest looking plant but more appealing varieties are being created. I have tried them with Anubis but they ate that.

Just read your edit. I think once the congos got fully grown they would predate the cardinals, just from my experience - congos have pretty big teeth :)
